Toffee Cookie

Ingredients:
1/2 cup oats finely chopped
2 1/4 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 package instant vanilla pudding (small)
1/2 cup butter (1 stick)
1/2 cup shortening
1 cup brown sugar
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 cup nuts (optional)
8 oz English Toffee
Directions:
Preheat oven to 325 degrees
Line 2 heavy baking sheets with parchment paper.
Finely chop the oats in a food processor. Transfer the oats to a medium size bowl. Add the flour, baking powder, baking soda, vanilla pudding mix, and salt. Mix to combine. Set aside.
Beat sugar, shortening, and butter until light and fluffy (around 4-5 minutes). Add eggs one at a time and vanilla. Add the flour mixture and beat just until blended. Stir in toffee and nuts.
Drop 1 tsp or 1 tbsp of dough onto the lined baking sheets at 1" apart. Bake for 13-15 minutes until the desired brownness. Cool on a rack for at least 2 minutes.
