Banana Nut Bread
½ cup butter
1 ¼ cup sugar
1 tsp vanilla
2 eggs
1 cup bananas smashed
¼ cup milk
2 cups flour
½ tsp salt
½ tsp baking soda
1 cup nuts
Preheat the oven to 350 degrees F. Grease 2 9X5 loaf pans or 1 Bundt pan.
1. Sift the flour, baking soda, and salt together in a bowl and set aside.
2. Cream the butter and sugar until the mixture is light and fluffy.
3. Add the eggs one at time until each one is incorporated well.
4. Add the bananas. The mixture could look curdled…this is a normal look.
5. Stir in the flour mixture just until incorporated.
6. Fold in the nuts and transfer to the prepared pan.
7. Bake:
Loaf Pan – Bake for 45-55 minutes
Bundt pan – Bake for 30-40 minutes
Muffins – Bake for 20 – 25 minutes or until a toothpick inserted in the middle comes out
clean.
8. Allow the bread to cool completely and wrap with plastic wrap.
9. Store in the refrigerator.
Note: The bread is great warm and better the next day for breakfast. The recipe can be doubled for an additional loaf placed in the freezer for future treats.
