Candied Yams

Candied yams are one of my all time favorite items. Sweet potatoes in general are amazing. When you add sugar, spices, and butter, these orange beatitudes are beyond delicious. In my Native American culture, yams are a staple item for family gatherings regardless of the occasion or season. This recipe is creamy, buttery, sweet, tender, and of course they melt in your mouth.
Ingredients:
3 large sweet potatoes, peeled and sliced about 1/2" thick
1/4 cup butter (1/2 stick)
1/4 cup brown sugar
1/4 cup sugar (granulated)
1 tsp cinnamon or pumpkin pie spice
Directions:
Preheat oven at 350 degrees. Peel and wash the potatoes to remove any dirt. Slice the potatoes into thin slices. Place the slices into an 8X8 baking dish and set aside.
Place the butter and sugar into a sauce pan over medium heat. Bring the mixture to a rapid boil. Turn off the heat and stir to add the desired spices.
Pour the mixture of the potatoes and cover with aluminum foil. Bake for 30 minutes. Slowly remove the foil. Re-cook without the foil for 15 minutes. Remove from the oven and allow to cool for 10 minutes before serving.
Serve warm as a dessert or side item. This dish is really good with baked or fried chicken, brown sugar and pineapple baked ham, or any steak recipe.
