Chicken Noodle Soup


1/2 rotisserie chicken (diced) or 2 boneless chicken breast (cooked)

2 carrots, peeled and chopped

2 celery stacks, chopped

1 medium onion, finely diced

1 garlic clove, chopped

3/4 tsp thyme

1/2 tsp Italian seasoning

2 cups chicken broth

2 chicken bouillon cubes

3 cups water

4 cups pasta (any type)


Add a drizzle of oil to a pot. Add carrots, celery, onion, garlic, thyme, and Italian seasoning to the oil. Cook slowly for about 3-4 minutes. Add the chicken, broth, bouillon cube, and water. Cook on medium heat for about 45 minutes. Add the pasta and cook for 10 minutes. Add parsley as a garnish.
