Chicken Tortilla Soup


2 tsp oil

1 medium onion, chopped

3 garlic cloves, minced

1 small jalapeno (optional)

1/2 medium green pepper, chopped

1 rotisserie chicken, chopped (deboned and deskinned)

1 small bag of frozen corn

1/2 cup water

2 tsp cumin

1 tbsp chili powder

1/2 can green chilies

4 cans chicken broth

2 cans diced tomatoes

2 cans tomato sauce


Add oil to a large stock pot. Add onion, garlic, jalapeno, and peppers with cooking until soft. Add the remaining ingredients and bring to a boil. Cook for 45 minutes.

Serve with tortilla chips and your favorite toppings (sour cream, avocado, diced onions, and/or cheese).
