Coconut Custard Pie

Say what?! Yes, are you ready for a slice of pie? I just love anything that is in the coconut family. When you add a pie shell with coconut that is a reunion of taste.


1 cup sugar

2 tbsp flour

2 eggs

3/4 stick of butter, melted

1 cup milk

1 tsp vanilla

2 - 6 oz frozen or fresh coconut


Preheat oven to 350 degrees. Mix all of the ingredients together except the coconut. Add the coconut and blend well. Pour into a 9 inch unbaked pie shell. Bake for 45 - 60 minutes or until the crust is brown and the custard is firm. Cool for at least 1 hour before cutting.

Great cold!
