Lo Mein

Do you enjoy Lo Mein from your favorite restaurant?
This recipe is so quick (under 30 minutes), delicious, and inexpensive.

Lo Mein**
Ingredients:
8 ounces lo mein egg noodles or thin spaghetti noodles
1 TBSP oil
2 cloves garlic, minced
½ cup squash
½ cup zucchini
½ red bell pepper, thinly sliced
1 carrot, thinly sliced
1/4 cup snow peas
1 small onion
1 cup cabbage
For the sauce:
2 TBSP reduced sodium soy sauce, or more, to taste
2 TSP brown sugar
1 TSP sesame oil
1/2 TSP ground ginger powder or fresh
2 dashes of Cheyenne pepper
Sauce: Or your favorite Stir-Fry Sauce (my favorite is Tsang Classic Sauce)
Directions:
Sauce: Mix together soy sauce, sugar, sesame oil, dried ginger, and Cheyenne pepper in a bowl.
2. Pasta: Cook pasta according to the package instructions and drain.
3. Vegetables: Heat oil in a large skillet over medium high heat. Add the carrots, bell
pepper, and onions to the pan. Stir frequently for about 3 minutes or until tender.
Remove the vegetables to a bowl. Add squash, zucchini, and asparagus and cook for
about 2-3 minutes. Remove the vegetables to a bowl. Add snow peas and cook for
about 2 minutes.
4. Mix the sauce and pasta together until combined. Add the vegetables and serve
immediately.
**Protein can be added.
