Are you seeking for a gluten free cookie? Look no farther....this cookie has just 5 items, mixed in one bowl, and no butter (say what?!).
1 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 tsp baking soda
Preheat oven to 350 degrees. Mix peanut butter, sugar, and vanilla. Add the egg and mix until combined.
Line a baking sheet with parchment paper. Lightly grease the parchment paper and drop the cookie dough in tsp or tbsp size balls with at at least 2" between cookie.
Bake for 10 minutes.
