Pulled Beef Tacos
Hello Friends!!! Pulled beef is amazing in tacos, a bowl, or as an omelet. Pulled beef is so amazingly delicious and as easy to cook. For this recipe, I used vegetables that were on the verge of spoiling. So why not cook with them to create a delicious meal? Did I say that the crock pot does a majority of the work?!


Ingredients:
2 lb Beef roast (any cut of beef will work including steaks or pieces of beef - chuck roast has more fat but provides a richer flavor)
2 tomatoes Roma or 1 large tomato
2 jalapenos deseeded and cut in half
1 head of garlic cut in half
1 small red onion quartered
2 tbsp chili powder (optional: add 1 package of taco seasoning)
1 tsp pepper
1 tbsp red crushed pepper (optional to add additional heat)
1 cup water or broth
Instructions:
Place the meat and then the vegetables in a crock pot. I use a liner in my crock pot for easier clean up. Add the water or broth. Cover and cook on low for 8-10 hours or on high for 6 hours. The meat is done when it is fork tender. Fork tender is when a fork can be placed into the meat and the meat separates.
When the meat is done, remove from thebeef and place into a bowl. Pull the meat apart with two forks. Remove the vegetables from the juice and blend in a blender or take a fork and smash the vegetables. If the vegetables have been blended in a blender, add the pureed vegetables back to the crock pot. Add the separated beef and blend together.
Serve with warm tortilla shells and your favorite toppings.
