Salsa Verde - Green Tomatillo Salsa

6 tomatillos, husked and rinsed

1 jalapeño

1 white onion

4 garlic cloves

6-7 cilantro sprigs (fresh) - stems removed

1 tsp olive oil

Preheat the oven to 350 degrees. Place the first 5 ingred0ients in a baking dish and roast for 15-20 minutes. Remove from the oven and allow the items to cool. Place in a blender or food processor with cilantro and olive oil. Blend until coarse.

Serve with tortilla chips or over your favorite tacos!
