Vegetable Soup
















Nothing says warmth like a cup of homemade vegetable soup especially when the bowl is packed full of fresh vegetables.

Ingredients:

1 Tbsp oil

3 medium potatoes peeled and diced

4 ears of fresh corn (frozen works great too)

1 - 16 oz can of diced tomatoes

2 cups of water

1 bag of okra (fresh or frozen)

Salt and Pepper to taste

Instructions:

Place the oil in a large stock pot. Add the potatoes, corn, tomatoes, and water to the pan. Allow the vegetables to cook for around 20 minutes over medium high heat. Once the potatoes are done (by piercing with a fork), add the okra, salt and pepper. Allow to cook for an additional 15 minutes.


Serve with warm cornbread or serve alone.
