Whoopie Pie
















Ingredients:

1 3/4 cup flour

2/3 cup cocoa powder

1 1/4 tsp baking soda

1/2 tsp salt (omit if using salted butter)

1/2 cup butter, softened

1 cup sugar

1 egg

1 tsp vanilla extract

1 cup half n half


Filling:

1/2 cup butter

2 cup marshmallow crème

1 cup powdered sugar

1 tsp vanilla extract


Instructions:

Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper.


Combine flour. cocoa powder, salt, and baking soda in a bowl. Set aside.


Cream butter and sugar together until light and fluffy. Add egg and vanilla. Add milk. Slowly add flour with mixing just until combined.


Scoop onto the prepared pans with 2-3 inches apart. Bake for 10-12 minutes. Allow to cool on a wire rack.


Filling: Place all ingredients in a large bowl and beat until creamy. Place in the refrigerator until the cookies are cool.


Assembly: Spread the filling on the bottom (flat) portion of the cookie. Place another bottom (flat) cookie onto of the filling with gently pressing down.


Store in the refrigerator up to 4 days.
